Shankarpali
Crisp Sweet Diamonds
The classic festive sweet fried snack, made lighter with reduced ghee and 5 g of Power Sprinkle kneaded into the dough.
Ingredients
- 100 g maida
- 5 g Power Sprinkle
- 25 g sugar
- 15 g ghee (for the moyan)
- 50 ml milk
- Oil for frying
Method
- Warm the milk with the sugar and ghee, stirring until the sugar fully dissolves. Cool to lukewarm.
- Mix the maida and Power Sprinkle thoroughly so the powder disperses evenly.
- Pour in the lukewarm milk mixture and knead into a stiff, smooth dough. Cover and rest 15 minutes.
- Roll out to about 4 mm thickness and cut into small diamonds.
- Heat the oil to 150–160°C — deliberately the low end. A scrap of dough should rise slowly, not sizzle violently.
- Fry in small batches on low-medium flame until pale golden, turning once. Do not take them to deep brown.
- Drain well and cool completely before storing airtight.
