About the numbers
How these figures are calculated
Nutrients are neither created nor destroyed by ordinary cooking, so each dish is calculated by adding the nutrient content of every ingredient and dividing by the weight of the finished dish. Values are then expressed per 100 g and compared against the daily requirement. Each table states the basis used.
