Ingredients

  • For the white sauce (makes about 120 g):
  • 1 tablespoon butter
  • 2 teaspoons maida
  • 100 ml milk
  • 20 g grated cheese
  • Salt, black pepper, oregano and chilli flakes to taste
  • To assemble one serving:
  • 100 g white sauce (from above)
  • 5 g Power Sprinkle
  • 50 g boiled pasta

Method

  1. Melt the butter in a pan on a low flame. Add the maida and cook, stirring constantly, for 1–2 minutes until it smells nutty. Do not let it brown.
  2. Add the milk a little at a time, whisking all the while so no lumps form. Cook until the sauce thickens and coats the back of a spoon.
  3. Season with salt, pepper, oregano and chilli flakes. Add the grated cheese and stir until melted. You now have about 120 g of sauce.
  4. Turn off the heat and let the sauce stand for about a minute, until it stops steaming heavily.
  5. Weigh out 100 g of the sauce. Whisk in the 5 g of Power Sprinkle until completely smooth.
  6. Fold in the 50 g of boiled pasta and serve immediately.
