Red Sauce Pasta
Tangy Tomato, Boiled and Peeled
Smooth tomato pasta assembled from 100 g sauce, 50 g boiled pasta and 5 g Power Sprinkle, using boiled and peeled tomatoes for a sweeter, silkier sauce.
Ingredients
- For the red sauce (makes about 200 g):
- 2 medium tomatoes
- 2 dried red chillies
- 1 tablespoon oil
- 2 cloves garlic, chopped
- 1 small onion, chopped
- ¼ teaspoon sugar
- Salt and mixed herbs to taste
- To assemble one serving:
- 100 g red sauce (from above)
- 5 g Power Sprinkle
- 50 g boiled pasta
Method
- Boil the tomatoes with the dried red chillies until the tomato skins split, about 5–7 minutes.
- Drain, slip off the tomato peels, and blend the tomatoes and softened chillies to a smooth purée.
- Heat the oil and sauté the garlic and onion until soft and translucent.
- Add the purée, salt and herbs. Cook on medium flame 8–10 minutes until thickened and the raw smell disappears.
- Stir in the sugar. Beyond balancing the tang, this softens the acidity, which keeps the sauce smooth in the next step. You now have about 200 g of sauce.
- Turn off the heat and let it stand a minute or two until warm rather than bubbling.
- Weigh out 100 g of the sauce and stir the 5 g Power Sprinkle through until evenly mixed.
- Fold the 50 g boiled pasta through and serve within a couple of minutes.
