Sweet Sheera (Suji Halwa)
A Warm, Comforting Classic
The beloved Indian semolina sweet in six simple steps, with 8 g of Power Sprinkle folded in off the heat to protect its nutrition.
Ingredients
- 20 g suji (fine semolina)
- 8 g Power Sprinkle
- 25 g powdered sugar
- 15 g ghee
- 40 ml whole milk
- 2 green cardamom pods, crushed
- 1 pinch saffron (optional)
- 5 g cashew or raisin garnish (optional)
Method
- Warm the milk with the saffron until just hot — do not boil. Set aside.
- Heat the ghee in a small heavy pan on low-medium flame. Add the suji and roast, stirring constantly, until pale golden and nutty — about 4–5 minutes.
- Lower the flame. Pour in the warm milk slowly, stirring constantly — it will splutter. Stir until absorbed and thickened, about 2 minutes.
- Add the sugar and cardamom, stirring briskly. It loosens as the sugar melts, then thickens again over 1–2 minutes.
- Turn off the flame completely. Fold in the Power Sprinkle and stir thoroughly.
- Garnish and serve warm.
